I don’t know about you but when the weather is hot I just don’t feel like cooking. Carrot Slaw is the perfect salad to go along with grilled chicken. Put this great old favorite together in the morning, which will give it plenty of time to chill. I add the diced apple just before serving. Next time you’re attending a family gathering or potluck mix up this delicious carrot slaw that children particularly love. This recipe is easily doubled or even tripled or you can make a smaller amount if there are just two of you. My husband and I will be enjoying this carrot slaw all weekend!
Carrot Slaw
Ingredients:
6 medium carrots, peeled
¾ cup diced celery
¼ cup diced onion
1/3 cup raisins
½ cup diced unpeeled apple
½ cup mayonnaise
Salt and pepper to taste
Directions:
Grate the carrots by hand or in a food processor. Toss with celery, onion, raisins, and apple. Mix in the mayonnaise, season well with salt and pepper, and chill thoroughly.
Carrot Slaw is such a simple salad to enjoy during the hot summer weather. I would think you could even add a little crushed pineapple to change the taste if you wanted.
We are not using the kitchen much during this spell of hot weather but carrot slaw and grilled chicken is a perfect summer dinner. This recipe would go perfectly with any of my top 16 summer recipes!
