Summer is the perfect time to enjoy the local vegetables either from your garden or the local Farmers Market. We enjoyed some delicious corn recently and had a few ears leftover. I decided to make this grilled corn, avocado and tomato salad to enjoy with our grilled burgers. It was so good. The salad recipe makes about four servings so Iโm looking forward to enjoying the leftovers for lunch!
This salad goes together in no time and is perfect for your next dinner! Use the freshest ingredients you can, either from your own garden of a local Farmer’s Market. Makes all the difference.

Grilled Corn, Avocado and Tomato Salad
Ingredients:
3 ears of corn cooked (can be grilled or boiled)
1 pint grape tomatoes
2 ripe avocados
2 Tbsp. fresh cilantro, chopped
Dressing:
Juice of one lime
2 Tbsp. olive oil, extra virgin
1 Tbsp. Honey
1 clove garlic, minced
Salt and Pepper to taste
Directions:
Cut the corn off the cob and place in a large bowl. Slice the tomatoes in half and add to the corn. Dice the avocado and chop the cilantro and add to the corn, tomato mixture. Prepare the dressing by combining all the dressing ingredients in a small jar or a small bowl. Whisk together until well mixed. Add the dressing to the corn, avocado and tomato mixture and gently mix together.
Let the salad sit for about 15 minutes and serve on a bed of lettuce. This will give you time to grill some burgers on the grill which pairs perfectly with this salad.
