I have been making this broccoli salad for years, and every time I make it this salad is a big hit. It’s a little more time consuming as you make a delicious creamy dressing to toss with the salad. The dressing can be made a day ahead of time. Then just add the remaining ingredients together and toss with the dressing before serving. I consider this to be the best ever broccoli salad.
Best Ever Broccoli Salad
Ingredients:
Dressing:
½ cup sugar
1 ½ tsp. Cornstarch
1 tsp. Ground mustard
¼ cup white vinegar
¼ cup water
1 large egg plus 1 egg yolk
½ cup mayonnaise
3 Tbsp. butter
Salad:
4 cups of fresh broccoli florets
2 cups sliced mushrooms
½ medium red onion, chopped
1-11oz can of mandarin oranges
6 slices of bacon, cooked and crumbled
½ cup raisins (golden or regular)
Directions:
In a large saucepan combine the sugar, cornstarch and mustard. Combine vinegar and water. Stir into the sugar mixture until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat and cook and stir 2 minutes longer. Remove from the heat.
Stir a small amount of hot filling into egg and egg yolk; return all to pan, stirring constantly. Bring to a gentle boil and cook and stir 2 minutes longer. Gently stir in mayonnaise and butter. Cool to room temperature without stirring. Chill.
In a large bowl combine the broccoli, mushrooms, onion, oranges, bacon, almonds and raisins. Pour dressing over the salad and toss to coat.
Store in the refrigerator until ready to serve. Makes about 12 servings.
Sounds good especially on a hot day. I have broccoli in the garden making small florets now that the main heads have been removed. – Margy
