My Garden: Making Evergreen Garlands

Have you ever made your own wreath with fresh evergreens? When I was a child we had friends that lived in a converted barn. Every year they would invite friends over for a wreath making party. Everyone brought various greens and other items to decorate the wreathes with. There would be special activities for all the children such as sticking cloves into oranges. At the end of the day we’d all gather in their home for hot cider and cookies. It was one of my favorite activities leading up to Christmas.

I had great aspirations of making several wreaths and an evergreen garland to decorate our deck. We have been extremely busy the last few weeks and the past two weekends we were out of state helping my mother move. Usually I have my blog written a week in advance but somehow the making of the garland kept getting put off. I had a  romantic idea of heading out to the woods on a snowy afternoon, collecting the evergreens and making a beautiful garland to adorn our deck. Remember the deck we repainted this summer?  Not exactly a small deck! I guess I wasn’t thinking just how long it would take me to make a 50 foot garland! All of a sudden I realized I was running out of time and if I didn’t get out there today and cut the greens there would be no garland and no blog post.

So outside I went today and it was blustery and cold and yes even a few flurries. First I collected numerous branches from various evergreens on our property. I then cut the greens into various lengths from 6-12 inches.

Use heavy green wire or rope as a base, much like you can use a metal frame for a wreath. If you use a light colored rope you will have to make sure you cover every inch of it so the rope isn’t showing through!

Take a handful of your greens and make sure they are all facing the same way. I found it worked well if you wrapped the ends together before attaching to the rope.

Using some small gauge wire wrap the greens to your larger wire or rope.

Take another handful of greens and repeat the process overlapping the ends of the previous bunch of greenery. Keep repeating until your garland is as long as you want it to be. When you come to the end you just place the last bunch of greenery going in the opposite direction! If you want to get fancy you can add ribbons or other decorations. I kept mine plain. After working outside for what seemed like hours my hands were cold and covered with sap! I had about five feet of garland made!

Just enough to wrap around the post supporting the deck! I do like the way it looks so when the sun comes back out I am going to go outside and finish this project. Maybe I’ll show you my completed garland next week!

Handmade garlands are a bit heavier than artificial garlands so plan accordingly when you are hanging it. I plan to use some very large twist ties to secure it to our deck.

Frugal Tips: Food for Friends

I don’t know about you but I love giving and receiving homemade gifts. I find a lot of people don’t want anymore “stuff” and a gift of food is perfect. It is also fun to make up a basket of goodies and I will often feature some sort of theme. For example; a jar of my homemade basil pasta sauce with a package of noodles, cheese, and a bottle of red wine. Another favorite is a basket filled with homemade pancake mix and a bottle of pure Vermont maple syrup. Our neighbors have their own sugaring operation. I can buy local and support them at the same time. There is nothing like pancakes with pure Vermont maple syrup on them! Don’t forget to include the recipe for making the pancakes and waffles!

Food For Friends

This recipe makes five 3-cup packages, perfect for gift giving.

Five-Grain Pancake and Waffle Mix

5 cups of all-purpose flour
2 ½ cups whole wheat flour
1 cup rye flour
1 cup corn flour
1 cup brown or white rice flour
1 cup yellow cornmeal
1 cup powdered buttermilk
¾ cup firmly packed dark brown sugar
¼ cup baking powder
2 Tbsp salt
1 cup toasted wheat germ
1 cup oat bran

Measure all the ingredients except the wheat germ and oat bran into a large bowl and mix thoroughly with your hands. Sift the flour mixture and add the wheat germ and oat bran. Mix again.

Divide in 5 portions of 3 cups each. If you want to make larger packages, simply distribute the mix in amounts that are divisible by 1 ½ cups.

Don’t forget to include the recipe for making the pancakes.

1 egg for pancakes or 2 eggs for waffles
1 to 1 ½ cups milk
2 Tbsp melted butter
1 tsp vanilla extract (optional)
1 ½ cups mix

Directions for making ten to twelve 4 inch pancakes or 4-5 waffles:

In a bowl beat together the eggs, 1 cup milk, melted butter and vanilla. Stir in the mix. Thin with additional milk if needed. Cook on a lightly oiled griddle or waffle iron until browned on both sides.

Recipe Box: English Muffin Bread

Sharing another family favorite today. I’ve had this recipe ever since I was first married, long before I ever made my first loaf of “real” bread. It is perfect toasted for breakfast especially smothered with some of my own jam.

English Muffin Bread

5 cups flour
5 tsp yeast (2 packages)
1 Tbsp sugar
2 tsp salt
¼ baking soda
2 cups of warm milk (120-130 degrees)
½ cup warm water (120 to 130 degrees)
Cornmeal

In a large bowl, combine 2 cups of flour, yeast, sugar, salt and baking soda. Add warm milk and water; beat on low speed for 30 seconds, scraping the bowl occasionally. Beat on high for 3 minutes.

Stir in remaining flour, the batter will be stiff. Do not knead. Grease two 8 x 4 inch loaf pans. Sprinkle pans with cornmeal.

Spoon the batter into the pans and sprinkle with a dusting of cornmeal on the top.

Cover and let rise in a warm place until doubled, about an hour.

Bake at 375 for 35 minutes or until golden brown. Removed from the pans immediately and cool on a wire rack. This bread freezes well.

Prudent Pantry: Gifts in Jars

One of my favorite gifts to give is a gift in a jar! Last year I made a wonderful soup mix which I gave as gifts. This year I am making a M&M Cookie Mix. When you use the green and red M&Ms that are available this time of year it looks quite festive. Even the flour sifting down over the M&Ms looks like snow!

The recipient of this gift just has to add a few ingredients and in no time at all you have homemade cookies! Don’t forget to include the recipe on your jar!

M&M Cookie Mix

1 Cup M&M candies
2 cups flour
½ tsp baking soda
½ tsp baking powder
1 ¼ cup sugar

Layer the ingredients in the order given into a wide mouth 1-quart canning jar. Pack each layer in place before adding the next ingredient.

Attach a gift tag with the mixing and baking direction.

Directions:
1 jar M&M Cookie Mix
¾ cup butter, softened
2 eggs, slightly beaten
1 tsp vanilla

Preheat your oven to 375. In a large bowl, cream the butter, eggs and vanilla. Add the M&M Cookie Mix and stir until the mixture is well blended. Drop by rounded tablespoonsful onto a greased cookie sheet. Bake for 10-12 minutes. Transfer to wire racks to cool. Enjoy!

My Garden: December Update

Here we are in the midst of a busy month. The garden is quiet outside, covered lightly with a fresh coat of snow.

Outside may be cold but there is life inside. The narcissus bulbs I started a while ago have been beautiful filling the house with fragrance.

I was at the Farmers Market the other day and they were giving away African Violets, there is always room for one more. Who can resist a free plant!

December is one month you should not set foot in a store unless you’re truly an intrepid shopper. Holiday and Christmas shopping can be quite a challenge for busy parents.

Here are a few tips to help you finish your holiday shopping while remaining stress free! First make a list as soon as you can of all your gift recipients for the holidays. After each name list any ideas or gifts you already have for that person. Set a budget for each person as well. The last thing you want to do is spend the next half of the year paying off your holiday shopping!

Keep your list handy so you can easily refer to it while you are out shopping or doing any online shopping. If you keep this list on hand even after the holidays you can use it all year round. During the year you can check clearance bins to look for things someone on your list would like.

If you are doing online shopping be sure to compare prices! Search for coupons using Google or such sites as RetailMeNot.

Make it a game to find the cheapest price. Set a goal to have all your shopping done by a certain date. Organize your time so you can shop while your children are in school, or shop after work or spend a little time online each night.

Find a space in your home where you can set up a wrapping station. Wrap the presents as they come in and store them away so your little ones won’t find them.

Be sure to purchase a few extra items for those last minute gifts. I have a box where I keep small giftable items that are perfect for Yankee Swaps or gift exchanges that come up in December.

The days after Christmas are the perfect time to clean up on holiday décor, candles, wrapping paper and inedible gift items. Be careful about buying fragrances for next year, as time diminishes their potency; however, if you’re planning on giving Mom the perfume for Mother’s Day, you’ll probably be just fine.

In addition to keeping the holidays calm and cost effective, buying presents all year round helps you be more thoughtful of others. You can find gifts they will truly enjoy and use. By planning your Christmas shopping in advance you’ll beable to avoid the packed stores in December and nasty bills in the New Year.

Sour Cream Coffee Cake

We will have a houseful over the Christmas holidays. As a result I am trying to get as much baking done ahead of time as I can. I want to be able to enjoy my company and not be in the kitchen all the time! I’m sure many of you have a favorite coffee cake recipe; I have two. One I shared last year for an Overnight Coffee Cake. My mother-in-law gave this sour cream coffee cake recipe to me when I married her son! It is delicious and freezes well. I can make it this week, put it in the freezer and take it out to enjoy at Christmas.

Sour Cream Coffee Cake

Filling:

½ cup sugar
1 tsp cinnamon
1 tsp cocoa

Combine filling ingredients in a small bowl and set aside.

Batter:

3 cups flour
1 tsp baking soda
3 tsp baking powder
½ cup butter
3 eggs, unbeaten
1 ¼ cup sour cream
1 cup sugar

Sift together the flour, baking soda and baking powder. In a separate bowl cream the butter and gradually add the sugar. Then add the eggs one at a time. Blend in the flour mixture alternately with the sour cream. Lightly grease and flour a tube or Bundt pan.

Add the rest of the batter to cover the filling.

Bake the cake for 1 hour at 375 degrees or until done. Cool in the pan. This coffee cake freezes well!

Prudent Pantry: Cast-Iron Face Lift

I have a collection of cast iron pans that hang in my pantry. I love them! There are certain recipes that just seem to taste better when cooked in a cast iron pan, like corn bread.

Perhaps your cast iron pans need a facelift.

To restore yours, use a nonmetallic scrubber to remove the rust. Wash with a mild dish soap, rinse well and then dry with a clean towel. Then re-season the surface by coating it (inside and out) with unsalted vegetable shortening.

Put the greased skillet upside down on a foil lined baking sheet and bake at 350 degrees for one hour.

Let cool and then remove the excess grease with a paper towel.

Cast Iron Facelift

To prevent rust, never soak cast iron in water, put it in the dishwasher or scrub with metal scouring pads or harsh cleaners.

When storing put a paper plate, paper towel or a round coffee filter between pans to absorb moisture.

Homemade Mustard – a perfect gift

I love giving and receiving homemade gifts! There are many ideas you can use to give food gifts. One gift idea is homemade mustard. It is so easy and you can make up a basket with a loaf of fresh rye bread, some cheese, a few bottles of beer and your own mustard. Makes a wonderful gift.

Several years ago a friend of mine gave me a gift of her homemade mustard. In the package was a jar of mustard, a tiny whisk and the recipe! I thought it was such a wonderful gift. Today I share the recipe with you.

Homemade Sweet Hot Mustard

Ingredients:

½ cup white vinegar
1 beef bouillon cube
2 eggs
1 cup brown sugar
¼ cup dry mustard
1 Tbsp flour
¼ tsp salt

Directions:

Dissolve ½ cup water and ½ cup vinegar and bouillon in a pan over medium heat. In a small bowl beat 2 eggs and add them to the warm vinegar mixture. Combine the brown sugar, the dry mustard, flour and salt and whisk into the vinegar mixture. Keep whisking until thick.

Pour the mixture into small jars. Put lids on the jars and refrigerate when cool. Lasts two months in the refrigerator.
