Goal Setting Week 25

Deep breath. We received an offer and the contract is signed! Looks like we finally sold our house. Moving date set for the end of September. Our adventure to the west coast begins! I have to say it’s a rollercoaster of emotions, so excited to be joining our four children and grandchildren on the west coast and so sad to leave our family and friends behind on the east coast. I just keep telling myself, “Be anxious for nothing.”goal setting spring25

1. Find a new hosting site for my blog and make it secure. Done! This was the first goal accomplished this year and I am so happy to have a secure website.

2. Monetize my blog. This is in the works, I have set up two affiliate accounts. Soon you’ll be seeing links to my favorite items on Amazon. I’ve also teamed up with an amazing heirloom seed company, Mary’s Heirloom Seeds. Really don’t want to clutter my blog up with too many ads.

3. Create a cookbook. This is definitely getting put on hold. Hopefully I’ll have more time once we are relocated, may be postponed until the new year!

4. Be diligent about getting 10K steps in 5 out of 7 days a week. I’ve decided to change this goal to 3 out of 7 days a week! Three days a week seems to be doable at this point. We spent the weekend on a lake in New Hampshire and enjoyed a beautiful morning walk.goal setting

5. As we continue to prepare for our house sale, continue to de-clutter. We are now beginning to purge! So many pieces of furniture that we won’t be moving. There will be no problem completing this goal! Managed to pass along 2 canvas beach chairs and some plastic wine glasses this week. 18 items to go.goal setting

6. Read 25 books this year! Back on track! Finished a book this week!  Read Heading Out To Wonderful by Robert Goolrick. Someone recommended it to me and it was one of those books that was a good story until it wan’t! I didn’t like the ending which is always disappointing after you’ve spent your time reading the whole book. Only 3 books left to read to complete this goal!

7. Have a consistent meal plan each week and prepare ahead. This did not happen this week! We were away visiting friends for the weekend and the days before we were just eating what was on hand! Finished up the delicious grilled tomatoes on pasta, just as good as leftovers!grilled tomatoes

8. Finish 4 knitting projects. Completed! Made two hats and two scarves. Since this goal is completed I am going to put the baby sweater I was working on aside. I have a hard time knitting when the weather is warm so I will finish this sweater but probably not until the fall!goal setting 18

9. Clean out our freezer. Definitely a priority now! Used up some of my frozen pumpkin and made pumpkin scones. I have a little over 60 days to clean out not only the freezer but the pantry! Already putting together a bag for the local food pantry of items I know we won’t have time to eat before the end of September!goal setting

10. Take a few road trips and visit family and friends on the east coast that we will not see as often once we move to the west coast. Calling my aunt this week to arrange a time to come visit. Top priority to see her before we head west! Not so sure we’ll get to Maine to see our friends there.goal making

Grilled Tomatoes Stuffed with Goat Cheese

As I mentioned last week one of the benefits of spending time with friends is enjoying their love of cooking. Last week I shared the delicious Oatmeal Pancakes our friends made for us. This week I’m sharing another wonderful recipe, Grilled Tomatoes Stuffed with Goat Cheese. It’s a perfect summer meal as the tomatoes are cooked on the grill and then served over pasta. For the best taste, use fresh heirloom tomatoes that you have grown or purchased at a local farmer’s market. I could not believe how delicious this recipe was.grilled tomatoes

Grilled Tomatoes Stuffed with Goat Cheese

Ingredients:

½ cup soft fresh goat cheese
2 tsp. sliced scallions
1 shallot, minced
¼ tsp. salt
1 Tbsp. Fresh sage
4 medium heirloom tomatoes
Pasta

Directions:

Combine the goat cheese, scallions, shallot, salt and 1 Tbsp. fresh sage in a bowl. Mix well. Season with pepper, if you like. Using a small knife, remove a core shaped piece of tomato from the top of each tomato about 2” wide and 1” deep. Divide the cheese between each of the tomatoes.grilled tomatoes Grill the tomatoes for about 5 minutes.

While the tomatoes of being prepared bring a pot of water to boil and cook your pasta of choice. Time it so the pasta is done as the tomatoes come off the grill.

Divide the pasta among four shallow bowls. Place a tomato in each bowl, on top of the pasta. Serve with additional goat cheese and enjoy.grilled tomatoes

Be sure to serve the grilled tomatoes with some fresh bread to soak up all the yummy goodness. Can’t think of a more perfect summertime meal than these grilled tomatoes stuffed with goat cheese.

Oatmeal Pancakes with a Twist

Recently we completed on of our goals and took a road trip to visit friends in Virginia and North Carolina. One of the things I enjoy about staying with friends is you get to enjoy their cooking! We enjoyed some fabulous meals with wonderful company during our trip. I was lucky enough to have friends that are willing to share their delicious recipes with me. One of the recipes I came home with was for Oatmeal Pancakes with a twist. These healthy pancakes only have 3 basic ingredients; old-fashioned oats, cottage chees and an egg. The recipe makes one pancake, which is one serving. These oatmeal pancakes are delicious with maple syrup, yogurt or almond butter.Oatmeal Pancakes

Use a mini Cuisinart to mix up the batter and you’ll be enjoying these delicious oatmeal pancakes in no time. While one pancake is cooking you can be mixing up the next one. Add some chopped apple for extra taste.oatmeal pancakes with a twist

Oatmeal Pancakes with a Twist

Ingredients:

½ cup old-fashioned oats
¼ cup cottage cheese
1 egg
1 tsp. vanilla (optional)
Cinnamon or apple pie spice to taste

Add ½ cup diced apple, cored and cubed

Directions:

Add the old-fashioned oats, cottage cheese and egg to your mini Cuisinart. Blend thoroughly. Add in your vanilla and spices, if suing as well as your chopped apple.

Lightly spray your cooking surface with oil and place the batter in the pan. The batter is thick so you will need to spread it out evenly with your spatula or the bottom of a glass. It will be about ½ inch thick. Allow to cook for several minutes until the bottom is browned and the pancake will hold together. Carefully flip and cook the other side. Serve warm.Oatmeal Pancakes

Road Trip: The Blackburn Inn, Staunton, Virginia

On our drive north during our recent road trip we spent a night at The Blackburn Inn located in Staunton, Virginia. We were treated to a night of luxury. The Blackburn Inn was constructed in 1828. The Inn was envisioned and influenced by master builder and Thomas Jefferson’s protégé, Thomas R. Blackburn.The Blackburn Inn

 

The Inn was formerly part of the Western State Hospital. It has been renovated and restored to create a atmosphere that is both inspiring and welcoming. Set on a picturesque 80 acre campus in Staunton with stunning views everywhere. The evening we were there the grounds were dancing with the hundreds & hundreds of fireflies all blinking on and off across the front lawn as we came in after supper was really a magical touch.

 

The rooms are large and comfortable, a blend of historic roots and upscale modern comforts. It creates a high-end indulgent experience.The Blackburn Inn

 

Downtown Staunton is within walking distance and although we didn’t have a lot of time to explore the historic town we did enjoy a delicious dinner at the ???. I’d love to go back and do a little more exploring as the town has some wonderful architecture and small shops and galleries. Staunton is known as a small town delivering big culture. It was voted one of Travel + Leisure’s Favorite Towns in America!

 

Polyface Farm is just 20 minutes away where you can witness the holistic, sustainable farming practices of Joel Salatin, the most famous farmer in the world. I have read several of his books and highly recommend them!

 

There are also numerous breweries to experience on the Shenandoah Beerwerks Trail.

 

We may not travel to Virginia that often but The Blackburn Inn is definitely a place we would like to return to. Next time we’ll have to plan a long weekend stay so we can enjoy the surrounding Shenandoah Valley.The Blackburn Inn

 

It’s not often we stay in such a unique and historic inn. The way the building itself has been transformed into an modern inn while at the same time retaining it’s historic character is quite impressive. The staff greeted us upon arrival, was very attentive to our needs and made us feel right at home. The breakfast provided was excellent. Goal Setting Week 24

What a busy summer! First a road trip, then a short weekend trip to visit family and another busy weekend ahead! Folks interested in our house and trying to negotiate a price we both agree on is so stressful! We’ll see what happens.

1. Find a new hosting site for my blog and make it secure. Done! This was the first goal accomplished this year and I am so happy to have a secure website.

2. Monetize my blog. This is in the works, I have set up two affiliate accounts. Soon you’ll be seeing links to my favorite items on amazon. I’ve also teamed up with an amazing heirloom seed company, Mary’s Heirloom Seeds.

3. Create a cookbook. This is definitely getting put on hold. Hopefully I’ll have more time this fall.

4. Be diligent about getting 10K steps in 5 out of 7 days a week. I’ve decided to change this goal to 3 out of 7 days a week! Three days seems to be doable at this point. We spent this past weekend visiting family in Connecticut. I love walking there so many beautiful old homes to look at!goal setting

5. As we continue to prepare for an eventual house sale, continue to de-clutter. Our week was so busy I only managed to discard four items plus I gave 2 books away to friends. 21 items to go.

6. Read 25 books this year! Did not manage to finish a book this week! Still have 4 books left to read to complete this goal!

7. Have a consistent meal plan each week and prepare ahead. This past week was so hot I made a large batch of macaroni salad which we ate all week! I did change it up each night, one night adding tunafish another night adding hard boiled eggs. Lasted all week! Also enjoyed some delicious carrot slaw with grilled chicken one night.Carrot Slaw

9. Clean out our freezer. The only thing I cleaned out of the freezer last week was ice!

10. Take a few road trips and visit family and friends on the east coast that we will not see as often once we move to the west coast. Our long road trip to Virginia and North Carolina to visit friends and family is over. It was a lot of driving but so much fun. We have two shorter trips we are hoping to make in the near future. Next on the list is my aunt in upstate New York! She’s 90 so it’s time to pay her a visit.goal making

 

I may not be checking off a ton of goals each week but I feel like I’m making progress.

No Bake Breakfast Cookies

When we went on our recent road trip to North Carolina I made sure that we packed the best snacks for a road trip. We had plenty of fresh fruit and  cut-up vegetables as well as a few other healthy snacks. Rather than stocking up on cookies and sweets I made a batch of these no bake breakfast cookies. Theses cookies are easy to make, healthy, packed with protein and so delicious. These no bake breakfast cookies can be put together in less than five minutes and stored in the fridge for up to two weeks. I made a batch a few days before we left and stored them in our cooler during our road trip. I made them little smaller than the original recipe called for so instead of only making eight cookies I made 12 cookies.no bake breakfast cookies

No Bake Breakfast Cookies

Ingredients:

¾ cup peanut butter
1 Tbsp. real maple syrup
1 tsp. Vanilla
2 Tbsp. Chia Seeds
¾ cup old-fashioned oats
¼-1/2 cup mini chocolate chips

Directions:

Place the peanut butter, maple syrup and vanilla in a microwaveable bowl and microwave the ingredients of 20 seconds. Stir the mixture until well combined then add in the Chia Seeds, the old-fashioned oats and the mini chocolate chips. Stir well and ensure that everything is well incorporated. Roll the mixture in 8-12 balls and place the balls on a baking tray lined with parchment paper. Press the balls flat slightly and place them in the fridge for at least an hour.no bake breakfast cookies Store in an airtight container in the fridge for up to two weeks.no bake breakfast cookies

These no bake breakfast cookies are so delicious. They are perfect for a breakfast on the go or for your next car trip. They store easily and travel well. Perfect for what we were looking for.no bake breakfast cookies

Carrot Slaw

I don’t know about you but when the weather is hot I just don’t feel like cooking. Carrot Slaw is the perfect salad to go along with grilled chicken. Put this great old favorite together in the morning, which will give it plenty of time to chill. I add the diced apple just before serving. Next time you’re attending a family gathering or potluck mix up this delicious carrot slaw that children particularly love. This recipe is easily doubled or even tripled or you can make a smaller amount if there are just two of you. My husband and I will be enjoying this carrot slaw all weekend!

Carrot Slaw

Ingredients:

6 medium carrots, peeled
¾ cup diced celery
¼ cup diced onion
1/3 cup raisins
½ cup diced unpeeled apple
½ cup mayonnaise
Salt and pepper to taste

Directions:

Grate the carrots by hand or in a food processor. Toss with celery, onion, raisins, and apple. Mix in the mayonnaise, season well with salt and pepper, and chill thoroughly.Carrot Slaw

Carrot Slaw is such a simple salad to enjoy during the hot summer weather. I would think you could even add a little crushed pineapple to change the taste if you wanted.

We are not using the kitchen much during this spell of hot weather but carrot slaw and grilled chicken is a perfect summer dinner. This recipe would go perfectly with any of my top 16 summer recipes!

Goal Setting Week 23

We’ve had a busy last few weeks with a road trip and then several showings and now we have folks that want to come back and take a second look at our house! Exciting but it sure makes it hard when goal setting!goal setting spring 23

4. Be diligent about getting 10K steps in 5 out of 7 days a week. I’m beginning to realize that trying to get  my 10K steps in  five days a week is a real challenge. I’m pretty good at getting 3 or 4 days but have only made it for 5 days a couple of times. I miss walking on the beach with our friends in Virginia Beach! Since we’ve arrived back in Vermont it’s just been too hot to walk!goal making

5. As we continue to prepare for an eventual house sale, continue to de-clutter. Still working on this goal. Once we get an offer on our house we plan to have a moving sale until then it’s getting rid of a few items a week. Managed to weed pout 9 more items, including a bunch of ice packs we don’t ever use!  27 items to go.goal setting

6. Read 25 books this year! Finished another great book by Mark Batterson called The Circle Maker. There was a whole chapter on goal making which was so appropriate! Only 4 books left to read to complete this goal.

7. Have a consistent meal plan each week and prepare ahead. With all the interest in our house I am not planing on doing any prep work for meals. I am planning ahead but I’m also focusing on using up what we have on hand. Made a large pasta salad and used up a jar of pasta I had on hand and a bag of frozen peas from the freezer. Perfect cool meal for these hot days, I think we’ll be eating it all week.goal setting

9. Clean out our freezer. As I’ve said before our basement  freezer is nearly empty. Now to work on our upstairs freezer. A little more of a challenge as I have whole wheat flour and nuts to use up among other ingredients. As I said I did use up a bag of frozen peas in our pasta salad!goal setting

Homemade Gift Cards

Do you send out cards in the mail? With the rising costs of purchasing cards less and less people are sending out cards. I am one of the few that still like to send people a birthday card or an anniversary card. I don’t like spending a lot of money for cards, and the postage is bad enough! My solution is homemade gift cards!Homemade Gift Cards

 

Making your own cards can be very easy. Do you like to take photographs? Print them out on your home computer and turn them into cards. You can buy some card stock and fold the paper over for a simple card and then glue a photo on to the front.

 

You can also make a homemade birthday card by buying some colorful paper and cutting the sheets in half and then gluing a photo on the front.homemade birthday cards

 

In the past I have made cards using scripture. I can print them out and then color them in. Another fun project.homemade birthday cards

 

Recently we saw a fun card using little stones. This card would be harder to send through the mail but if you are sending a small gift you could easily enclose the card. We recently made several of these homemade birthday cards using rocks. My husband is an artist so he drew the arms and legs. Such fun creating these homemade birthday cards, hopefully the recipients enjoyed receiving them as much as we did making them!

 

If you enjoy sending cards in the mail don’t give up due to the high price of greeting cards, instead be creative and make your own. I had an aunt that used to dry flowers and create the most beautiful cards. I would save them for years!  One of our daughter’s has created a signature mouse, which she uses to make the most adorable gift tags, usually for Christmas.homemade birthday cards Use your imagination and whether you are using photographs, dried flowers or rocks have fun creating your own homemade gift cards!

Beef Tenderloin Chinese Style

Recently my husband and I had a real craving for red meat. At the same time I was looking through one of our old Chinese cookbooks, Chinese Cooking Class Cookbook and they had a recipe for Beef Tenderloin Chinese Style. The recipe was simple, we had everything on hand and it took less than thirty minutes to make it. Perfect for a weeknight when you are running short of time.Beef Tenderloin Chinese Style

The recipe works best if you marinate the beef for several hours. This makes the meat melt in your mouth! I prepared everything ahead of time and the actual cooking time was about 15 minutes.Beef Tenderloin Chinese Style

Beef Tenderloin Chinese Style

Ingredients

1 pound beef tenderloin
3 Tbsp. Sherry
1 ½ Tbsp. Soy sauce
1 tsp. Sugar
2 tsp. Oyster sauce
1 tsp. Cornstarch
½ tsp. Baking soda
¼ tsp. Salt
1 clove garlic, minced
1 ½ Tbsp. Oil
2 medium yellow onions cut into thin slices

Directions

Cut the meat across the grain into thin slices. Combine the sherry, soy sauce, oyster sauce, sugar, cornstarch, baking soda, salt and garlic in a medium glass bowl. Mix in the beef. Cover and refrigerate at least three hours.

Heat the oil in your wok over high heat. Stir-fry the onions in the oil until golden, 3-5 minutes. Transfer the onions to a serving plate. Keep warm.

Add about ¼ of the meat to the wok, spreading out slices so they do not overlap. Cook slices on each side just until lightly browned, 2-3 minutes. Removed meat from pan and arrange over the onion slices. Repeat twice to cook the remaining meat. Makes about 4 servings.Beef Tenderloin Chinese Style

This simple Beef Tenderloin Chinese Style recipe is one we will definitely make again. I couldn’t believe how delicious the beef was! Satisfied our red meat craving!
