Laundry Tips

One of the best tips I have is line drying your clothes. Hanging your clothes on the line not only gives them a nice clean scent, but also saves the wear and tear on electric dryers, and saves energy! It will also help your clothes to last longer. Many people don’t like to hang their clothes on the line because they don’t feel very soft after they are dried. Did you know you can add 1 cup of vinegar to the rinse cycle of your load and your dried clothes will be much softer. Hanging clothes on the line is also a great way to diminish stains. The sun has a natural whitening power which will help diminish stains. I just love the way sheets smell after hanging in the sun all day!clothes drying, prudent living

Have you ever tried making your own dryer sheets? Using a piece of old cloth or a cotton rag or even an old cloth diaper ad 5 drops of your favorite essential oil. Throw the cloth in the dryer. Don’t use more than 5 drops or you may stain your clothes! Try mixing essential oils to get just the scent you enjoy: rosemary and thyme or lavender and chamomile for example.

There are also several recipes of making your own fabric softener. These are used in the washing machine and are much cheaper than store bought fabric softeners. In a large plastic container with a tight fitting lid, add 4 cups of water or 2 cups of baking soda. Then add 2 cups of vinegar (add slowly as the mixture will foam). Use ¼ cup to ½ cup per load.Give a boost to your laundry with baking soda.

The easiest fabric softener is just adding 1 cup of vinegar to the rinse cycle as mentioned above. Want some fragrance to your clothes? Take your gallon jug of vinegar and add 25 drops of lavender essential oil to it.Vinegar and essential oil

Zucchini & Parmesan Crusted Chicken

This Zucchini & Parmesan Crusted Chicken recipe has been adapted from a recipe I tried using HelloFresh. Although the original recipe was good I felt it needed a little something more so I added some minced garlic! Why have I never thought of topping a chicken breast with shredded zucchini? The zucchini keeps the chicken moist and tender while it is cooking. The addition of garlic and Parmesan gives a delicious flavor to the mix.Zucchini Parmesan Crusted Chicke

Zucchini & Parmesan Crusted Chicken

Ingredients:

2 Chicken Breasts, about 12 oz total
1 zucchini, shredded
¼ cup Parmesan cheese
1 tsp dried chili flakes
1-2 gaarlic cloves, minced

Zucchini Parmesan Crusted ChickeDirections:

Preheat your oven to 400 degrees. Grate the zucchini and place into the center of a clean kitchen towel. Gather the corners and squeeze the excess moisture out over your sink. Place the zucchini in a bowl. Add the minced garlic, Parmesan cheese and chili flakes to the zucchini. Mix well.

Pound the chicken breast until they are about ½ inch think. Season both side with salt and pepper and place on a lightly greased baking sheet. Top each chicken breast with a thick layer of the zucchini mix. Bake 15- 30 minutes or until just cooked through. During the last two minutes of cooking, heat the broiler to high and broil for about 2 minutes or until golden brown on top.Zucchini Parmesan Crusted Chicke

June in Vermont = Wild Strawberry Muffins

There are many things I enjoy about June in Vermont. Everything is just so green and the flowers are everywhere and the fields are just full of wild strawberries!June in Vermont They may be tiny but they are packed with flavor and make the best strawberry muffins. Something about the tiny size and the burst of strawberry flavor just enhances the taste of the muffins.Wild Strawberry Muffins

I’ve shared this tradition several times but hey it’s a tradition! My husband has a real fondness for these muffins and each year he will diligently spend an hour or more searching and picking these tiny little berries. The strawberries are short lived and if you don’t go right out and pick them the birds will eat them up. Wild Strawberries

In exchange I use them to bake up a batch of his favorite Wild Strawberry Spice Muffins.

We usually enjoy a few and then I freeze the rest to enjoy later this year. This year the strawberries were amazing and in abundance. My husband went out and in just an hour he had picked enough for a double batch of muffins. My mouth is watering as I write this!

My husband loves these muffins so much he will even prepare them for me so all I need to do is mix up the muffin batter. A good deal if you ask me!Wild Strawberry Muffins

This recipe would be wonderful with blueberries or even regular strawberries but I use it each year to make our delicious Wild Strawberry Spice Muffins!muffins, berry, strawberries

Wild Strawberry Spice Muffins

1 ¾ cup flour
½ cup sugar
2 ½ tsp baking powder
¾ tsp cinnamon
½ tsp salt
¼ tsp ground nutmeg
1 egg, lightly beaten
¾ cup milk
1/3 cup butter
1 cup wild strawberries

Topping (optional)
1 Tbsp sugar
¼ tsp cinnamon

In a bowl, combine all the dry ingredients. Combine the egg and milk. Add the egg mixture and butter to the dry ingredients; stir just until moistened. Fold in the strawberries.

Fill greased or paper lined muffin cups two-thirds full.

Combine the topping ingredients and sprinkle over the batter. Bake at 400 degrees for 20 minutes. Cool for five minutes before removing from pan to a wire rack.strawberry muffins This recipe makes one dozen muffins. The recipe can easily be doubled and they freeze well. Enjoy!

Putting Thrift Into Action

Our consumer culture has turned many of us into professional shoppers. But how good are we? We shop with emotional fervor, but we scoop up the merchandise too fast and we’re too trusting of marketing claims and hype. While we’re obsessed with low prices we are also mesmerized by new “features” and “options” but are we calculating value: performance over time? A better picture would be if we found pleasure and pride in living with a small and finite collection of durable goods. Durable goods are those items that last longer than three years. How do you get there? We need to think before we buy and then care for what we have.gadgets

As I begin to sort through my kitchen and canning supplies I am taking hard look at what I have in my cupboards and how often I use these items. For example I have several gadgets that I can use to chop nuts, an old fashioned bowl and chopper blade (which I NEVER use), a Zyliss chopper, which I SELDOM use and a mini chopper which I use all the time and a mini Cuisinart which I also use all the time. Do I need all four, no! Keep two, the other two go.nut choppers

Now is a good time to be conscience about my spending. In fact with my husband unemployed it is the perfect time to put selective spending into action.

The first thing I am going to do is calculate how much we’ve spent over the last month on any discretionary subscriptions we have. (For example Hulu, Netflix, etc.) We actually don’t have very many discretionary subscriptions as we have really cut back in the past. However I am canceling our Hulu subscription. We really don’t watch much TV in the summer. We have no cable subscription and usually rely on Netflix to watch any shows or movies.

The idea is not to deprive yourself but to realize if you are spending money for things you don’t really use or want you can consciously reallocate that money into something you need or love! Let’s work at making the most of our money and pay attention to what we’re spending it on. Blueberry Dutch Baby

This delicious oven pancake can be made with fresh or frozen berries and enjoyed anytime of the day. As my husband says it’s a great excuse to enjoy pure maple syrup! IMG_7973

Blueberry Dutch Baby

2 tsp butter
1 cup milk
¾ cup flour
½ cup egg substitute or eggs to measure 1/3 cup
1 Tbsp coconut oil
1/8 tp cinnamon
Pinch salt
1 cup of fresh or frozen blueberries (optional – I baked my plain)

Preheat your oven to 450 degrees. Place butter in a 9 inch oven proof skillet or glass pie plate. Place in oven and heat until the butter melts.

Meanwhile combine the milk, flour, eggs, oil, cinnamon and salt in a blender and process until smooth, about one minute.

Remove skillet from the oven and swirl so that the butter covers the bottom and sides of the skillet. Pour in milk mixture and sprinkle evenly with blueberries. Bake until the pancake is puffed and lightly browned, about 25 to 30 minutes. Dust with confectioners’ sugar. Cut into wedges and serve at once. Dutch BabyMakes about 4 servings. Delicious with a little yogurt as well. I enjoyed mine with a little of my Blueberry Lemon Sauce!

Making Progress in the Garden

I love it when the garden beds are finally all mulched and weeded and now I just have to stay on top of the little weeds that come along!

It won’t be long before it will be time to cut the garlic scapes.Garlic Scapes If you haven’t tried growing garlic yet you really should give it a try. Each year I plant my garlic in August using garlic that was recently harvested. Each year I grow just enough to almost get us through to the next garlic harvest. I choose big cloves to plant and as a result the garlic I harvest is nice and plump and so tasty! An added benefit is harvesting the scapes, which you can use to make all sorts of things from pesto to garlic scape pickles and just using the scapes in a stir-fry!Garlic Scape Scampi

The lettuce and peas I planted last month are all coming along. Who doesn’t love fresh peas from the garden! Now to quickly get the fence up!peas

My husband has been working on a little stone project to go around our chiminea. We have a large fire pit up behind the house but we thought it would be nice to have something smaller that the two of us could enjoy when we didn’t feel like making a larger campfire. My husband has been finding rocks on the property and has created a beautiful little area where we can sit in the evening and enjoy a little fire. It’s not finished yet but he’s enjoying the creative process!Chiminea

The Basics for a Thrifty Pantry

We’ve all got our favorite herbs and spices, but some ingredients are basics. For many, sugar starts off the day in your tea or coffee. Sugar is also a key ingredient in many treats. Salt, pepper, oil, and vinegar are also non-negotiable. As for condiments, many can be made at home and they’ll most likely taste better that way. A few recipes will get you started, but if you’re curious, head to the store and take a look at the labels on items like specialty dips, taco seasoning and cocktail sauce. You might be surprised to learn you have all the necessary ingredients at home.

Here is a list of the basic pantry items:
Sugar
Salt
Peppercorns
Olive oil
Vegetable oil
Vinegar
Herbs and spices you use the most
Tea and/or coffee

My favorite Taco Seasoning recipe.
1 Tbsp chili powder
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp crushed red pepper flakes
¼ tsp dried oregano
½ tsp paprika
1 ½ tsp ground cumin
1 tsp salt
1 tsp black pepperKeep your red spices in the freezer for maximum freshness.

In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

Homemade Cocktail Sauce is another easy sauce to whip up at home. I love shrimp in any form and once you try this homemade shrimp cocktail sauce you will never buy it in a bottle again! Best news is that you can make it up to a week ahead and store in your refrigerator. Makes enough for about 8-10 servings.

Homemade Cocktail Sauce
1/2 cup ketchup
2 tablespoons horseradish, plus more to taste
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce
1 to 2 pounds large shrimp, peeled and deveined.

Whisk together all the ingredients in a bowl. Taste and add more horseradish or any of the other ingredients to suite your taste. When you’re happy with the sauce, transfer it to a small serving bowl.

Cook the shrimp by poaching them in boiling water, pan-frying them on the stove, or roasting them in the oven until opaque. Arrange the shrimp around the cocktail sauce and serve hot or cold. Delicious!shrimp cocktail

Homemade salad dressing is another great way to use the ingredients you have on hand. This is my favorite balsamic vinaigrette that only has five ingredients! Store the leftovers in the refrigerator and if the dressing thickens just bring to room temperature before serving.

Balsamic Vinaigrette
6 Tbsp balsamic vinegar
¼ cup fresh lemon juice
1 tsp pure maple syrup
2 tsp Dijon mustard
6 Tbsp olive oil

Combine the vinegar, lemon juice and maple syrup in a bowl. Add the mustard and then slowly whisk in the olive oil. Perfect on any salad!Salad dressing

All Veggie Nachos- Low Fat

When we’re looking for a quick snack or dinner we often mix up a tray of nachos. Perhaps when you think of nachos you think of oozing cheese and lots of calories, but you can enjoy All Veggie Nachos and not have all the fat and calories! This is a quick snack but we often eat it for dinner. If you have leftovers the next days the bean–corn mixture is wonderful  mixture added to a salad!All Veggie Nachos

All-Veggie Nachos

Ingredients:

1 (15oz) can black beans, rinsed and drained
8oz of frozen corn, thawed
2 Tbsp chopped green chilies
1 Tbsp chili powder
½ tsp ground cumin
½ cup shredded cheddar cheese
2 cups baked tortilla chips
2 cups lettuce
1 tomato, chopped
¼ cup light sour cream
¼ cup salsa

Directions:

Combine the beans, corn, chilies, chili powder and cumin in a medium sized pan. Cook over medium heat stirring until hot. Add the cheese and stir until the cheese is melted.

Place the tortilla chips on a large plate.All Veggie Nachos Spoon the bean mixture over the chips. All Veggie NachosTop with lettuce, tomatoes, sour cream and salsa. Serve immediately! It’s June Already?

First of all I apologize to those of you that tried to take my survey yesterday on a smartphone or other mobile device, apparently it only works on a laptop or a desk top. I’m learning.

Spring is always such a busy time of year. There is yard work to be done and gardens to be planted and the weather doesn’t always corporate! Here in Vermont we often still have occasional chilly night in the early part of June. Memorial Day is the traditional weekend for putting your garden in. But you do have to keep an eye on the weather because tomatoes do not like cold nights and may need to be covered!Raised beds

At Nancy On The Home Front we are loving the month of June! The garden beds have all been weeded and pretty much planted. I’m trying a new bean this summer thanks to a reader from Georgia! He sent me some heirloom Butterbean Lima Bean seeds to try. Hopefully they will do well in my Vermont garden.Butterbean

When the weather is nice there is nothing better than enjoying a nice dinner on the deck after a full day of working in the garden.deck dinner

We’ve also removed four old raised beds and tilled the ground under and planted grass seed. It looks so much nicer as the raised beds were just built with old pine boards and were beginning to rot. We will do fine with our eight raised beds, after all there are only the two of us and I am not filling the pantry this year.Raised beds

I have weeded and mulched our blueberry bushes and given them all a little pruning. Nice to see they survived the winter and are covered with blooms. Looks like another good year for blueberries!Blueberry bushes

The raspberries are also doing well. I transplanted them last year from an abandoned raspberry patch and they all survived. I have mulched the paths and placed straw around the bushes. Hopefully this will keep the weeds down!Raspberry bushes

Gardening seems to be an endless job. I never quite get caught up on all the weeding but we’re concentrating on the beds you see as you drive in our property. We want folks to have a good first impression if we ever get a showing on our home! Still have a ways to go! A few more weeks and everything will be in bloom.Driveway approach

I love Vermont in June; the hillsides have so many different greens in them.
