Chocolate Mint Brownies

Are you looking for a low fat dessert to serve over the holidays? These Chocolate Mint Brownies are just the thing. No one will ever know they are low fat!

Chocolate Mint Brownies

Ingredients:

1 cup sifted cake flour
1 cup cocoa
¼ tsp salt
1 cup egg substitute
1 cup brown sugar
¾ cup dark corn syrup
¾ cup apple butter
2 Tbsp oil
1 oz unsweetened chocolate, melted
36 frozen (about 6 small boxes) Junior Mint candies, chopped (I did not shop them)

Directions:

Preheat your oven to 350. Spray a 9×13 pan with Pam.

Combine the cake flour, cocoa and salt in one bowl.Ingredients

In a second bowl combine egg substitute, brown sugar, corn syrup, apple butter, oil and melted chocolate. Mix the two mixtures together. Pour into your prepared pan and sprinkle with candies.ready for the oven Bake until firm about 30-35 minutes. Let cool completely before cutting.

These brownies are perfect to serve during the holidays with their peppermint kick. Everyone will enjoy them and have no idea that they are a healthy version of a brownie!

In case the brownies are not consumed immediately they can also be frozen to enjoy at a later date.

Exploring the Oregon Coast

We’ve had some beautiful weather during our time in Oregon. We took advantage of the sunny days and spent some time exploring the coast! Our first trip was to the Cape Kiwanda State Natural Area, to explore the beaches. Homemade is Best

As we get closer to Christmas I’m always trying to come up with good ideas for homemade presents. There are so many food gift ideas such as homemade vanilla.

Christmas Scents – Homemade Potpourri

I love the Christmas season and the wonderful smells associated with Christmas. If you like to fill your house with the wonderful smells at Christmas, then you will enjoy this seasonal scent you can make yourself. You only need a few ingredients. This homemade potpourri also makes a wonderful gift idea.

In preparation for this recipe I have been drying orange peels for the last week, our counter has a rather large pile of dried orange peels waiting to be put to use! If you have a wood stove going they dry out in just a matter of days.

Homemade Potpourri

Ingredients:

1 cup dried orange peels
6-8 cinnamon sticks
2 Tbsp. whole cloves
2 Tbsp. whole allspice

Directions:

In a large bowl combine the orange peels, the cinnamon sticks, the whole cloves and the whole allspice. Mix well.

Store the ingredients in an airtight container until you are ready to use them. If you are planning on giving the mix away, place the ingredients in a colorful holiday plastic bags.

Simmer one tablespoon potpourri plus 1/2 cup water in a small pot or potpourri warmer.

I found a very small crock pot at a yard sale that is perfect for simmering the ingredients. As the water heats, your house will be filled with the smell of Christmas.Christmas

Four Onion Gratin

Four-Onion Gratin

Ingredients:

¼ cup butter
6 leeks (white and pale green parts only), sliced
2 large onions, cut into eights
8 shallots, halved
2 garlic cloves, minced
1 ½ – 10 oz bags frozen baby onions, thawed, drained
2 cups whipping cream
2 Tbsp dry breadcrumbs
2 Tbsp chopped fresh parsley

Directions:

Melt the butter in a heavy large skillet over medium heat. Add leeks, large onions, shallots and garlic and sauté until all are tender, about 20 minutes.Saute, onions, leeks,garlic and shallots Add baby onions and cook for ten more minutes, stirring occasionally. Saute until tender Mix in 2 cups of whipping cream. Boil until cream is thickened to sauce consistency, about ten minutes. Transfer vegetable-cream mixture to a 6 cup shallow baking dish. (Can be prepared one day ahead. Cover and refrigerate. Return mixture to room temperature before continuing)4 Onion Gratin

Preheat oven to 425. Sprinkle breadcrumbs over onion mixture. Bake until breadcrumbs are golden brown and onion mixture bubbles, about 20 minutes. Sprinkle with parsley.

Homemade Cinnamon Applesauce Ornaments

Spending several months on the west coast and being close to our grandchildren has been wonderful! I love that they enjoy helping in the kitchen and I thought that making homemade cinnamon applesauce ornaments would be a wonderful craft to do with my granddaughter.Cinnamon Applesauce Ornaments

These ornaments smell wonderful and there is still time to make them before Christmas!Ingredients for ornaments

Just mix 1 ½ cups of cinnamon with 1 cup of applesauce to make your dough.Combine cinnamon and aplesauce

Place the dough between two pieces of waxed paper and roll out with your rolling pin to about 1/8 inch thickness. I found slightly thicker worked better.applesauce ornaments Peel off the top piece of wax paper and cut out shapes with cookie cutters. Add a small hole at the top of each shape with a straw or skewer and let them dry over night, or until they are completely hard. You could also put them in a 150-degree oven to speed up the drying process. Place them in the oven for about 20-25 minutes.applesauce ornaments

When cool thread a ribbon through the small hole to hang.

Cranberry Apple Pie

I will forever be grateful for my (ex) brother-in-law for introducing me to this delicious Cranberry Apple Pie. Whenever we spend Thanksgiving with family I make this pie. After all these years when I think of Thanksgiving I think of a Cranberry Apple Pie.Cranberry Apple Pie

Cranberry Apple Pie

Use a basic pie crust recipe for a double crust 9” pie.

Ingredients:

1 cup sugar
2 Tbsp flour
¼ tsp salt
2 cups cranberries
½ cup raisins (optional)
4 tart apples (Pippin or Granny Smith work best), peeled, cored and thinly sliced
Freshly grated zest of one orange
2 Tbsp unsalted butter

Ingredients for Cranberry Apple PieDirections:

Preheat your oven to 425 degrees. Roll out your pasty for the bottom crust and line a 9” pie pan. Roll out top crust an set aside.

In a large bowl stir together the sugar, flour, and salt. Add the cranberries, raisins, apples and orange zest. Toss to mix well. Pile the fruit mixture into the pastry lined pan and dot with bits of butter. Cranberry Apple Pie Cover with the top crust, trim and flute the edges. Cut a few vents in the top.Cranberry Apple Pie

Bake 20 minutes at 425 degrees and then reduce the heat to 350 degrees. Continue to bake until the crust is browned and the fruits are tender – about 40-50 minutes.Cranberry Apple Pie

Exploring the Oregon Museum of Science and Industry

Spending two months living in Portland, Oregon in a townhouse is a new experience for us. We are used to living in the woods of Vermont far from the city. There is so much to experience here and everything is so close.

Recently we had a chance to visit the Oregon Museum of Science and Industry (OMSI). It was a short drive from where we are staying, located right on the Willamette River. Parking was easy and it is also easily accessible by public transportation.OMSIOur daughter and her family had purchased a membership pass so we didn’t have to wait long to get in. With our two grandchildren, ages 2 and 4 there was more to see than we could take in during one visit. OMSI contains three auditoriums, including a large-screen theatre, planetarium, and exhibition halls with a variety of hands-on permanent exhibits focused on natural sciences, industry, and technology.OMSIThe hands on exhibits were the most fun for our grandchildren. There were cranes to drive.OMSIEven an earthquake house in which you could experience an earthquake! I think our grandchildren have been instructed as to what to do in an earthquake! They both ducked under the benches!OMSIAnother fun exhibit involved balls and air! As you can see in the background our grandchildren had great fun shooting balls up into the air. There were balls everywhere!Exploring-the-Oregon-Museum-of-Science-&-IndustryIt was the perfect place to spend a rainy Saturday and there was so much that we didn’t get to see. I hope we can go back again!

Celebrating Thanksgiving Away From Home

For the last number of years we have alternated between staying home one year and traveling to visit our children the next. With all four of our grown children now living in the Pacific Northwest it is nice because if we go visit the PNW we can spend Thanksgiving with all of them. We’ve had several Thanksgivings over the years where we would rent a house for the long weekend and we would all gather for a special Thanksgiving meal.

It was always fun because you were never sure what the rental house would provide, would there be a well stocked kitchen or would we be scrambling to find a large roasting pan to cook the turkey?

This year we are spending the months of November and December in Portland, Oregon. My daughter will be hosting Thanksgiving and we may do something different this year like a brunch!

That way we are not in the kitchen all morning but instead can enjoy a nice meal together and still have time to venture out for a hike! Much as I love traditions I am always open for new suggestions! After all what’s important is spending time with those you love and enjoying each other’s company!
