I love warm gingerbread for dessert, but weβre also trying to limit our desserts and when we do make them I try to lighten them up a bit. This Applesauce Gingerbread recipe is as good as regular gingerbread. A perfect dessert to enjoy on a crisp autumn night.
Applesauce Gingerbread
Preheat your oven to 325.
Ingredients:
1 Β½ cups flour
1 cup whole wheat flour
2/3 cup sugar
2 Β½ tsp. baking soda
1 tsp. ground ginger
1 tsp. Cinnamon
1 tsp. ground allspice
1 Β½ cups applesauce
1 cup molasses
3 egg whites
Directions:
Combine the dry ingredients in a large bowl. Add the applesauce, molasses and the egg whites. Stir to mix well. Spread batter evenly in a greased 9×13 pan. Bake at 325 for 40 minutes. Cool for at least 20 minutes. Serve warm with a light whipped toping. Makes 16 servings.
I was surprised at how delicious this gingerbread was! The applesauce helped make it moist and delicious. Since it was so healthy we added a little dollop of whipped cream on the top!

What sort of desserts do you enjoy once the weather turns cooler? There is something about gingerbread that makes me think of autumn and cooler nights and lighting up the wood stove.

This looks great, thank you for sharing. So many years ago when I was in scouts we made a campfire version with applesauce and a mix, and I have never forgotten that delicious taste. This will work much better for me now, I don’t buy mixes and haven’t had this applesauce version in 45+ years, like I said so many years ago!
