When we’re looking for a quick snack or dinner we often mix up a tray of nachos. Perhaps when you think of nachos you think of oozing cheese and lots of calories, but you can enjoy All Veggie Nachos and not have all the fat and calories! This is a quick snack but we often eat it for dinner. If you have leftovers the next days the bean–corn mixture is wonderful mixture added to a salad!
All-Veggie Nachos
Ingredients:
1 (15oz) can black beans, rinsed and drained
8oz of frozen corn, thawed
2 Tbsp chopped green chilies
1 Tbsp chili powder
½ tsp ground cumin
½ cup shredded cheddar cheese
2 cups baked tortilla chips
2 cups lettuce
1 tomato, chopped
¼ cup light sour cream
¼ cup salsa
Directions:
Combine the beans, corn, chilies, chili powder and cumin in a medium sized pan. Cook over medium heat stirring until hot. Add the cheese and stir until the cheese is melted.
Place the tortilla chips on a large plate.
Spoon the bean mixture over the chips.
Top with lettuce, tomatoes, sour cream and salsa. Serve immediately! Each bite is a burst of delicious flavors. Next time you are thinking of making a tray of nachos try this healthier version!
