Garlic scapes, what are they? Garlic scapes are the flower bud of the garlic plant. The bud is removed in late June to encourage the garlic bulbs to thicken up. The question is what do you do with garlic scapes? Scapes can be used in so many ways. They make a fabulous addition to a flower bouquet but they are also so delicious to eat. You can use them in any recipe exactly the way garlic is used. Last week I mentioned that it was almost time to harvest my garlic scapes.
How do I use them? If you are a pesto lover they make the most delicious garlic scape pesto. You can combine it with basil or just use the scapes. Either way is delicious, we especially enjoy garlic scape pesto tossed with pasta!
Garlic scapes can also be cut up and used in a stir fry. One of my favorite stir fry recipes is this delicious garlic scape scampi. Use them like you would onions in any favorite stir fry recipe.
I’ve also made garlic scape pickles. They taste very much like pickled beans.
The more ways I find to use the garlic scapes the more I think I should just grow more garlic!

try making pickled garlic all you do is peal the garlic then put into a mason jar cover with vinegar and add some sugar no more than a tablespoon or two, add some dill, or black pepper, chilli’s or what ever kind of spice your husband likes and a pinch or two of salt. put it into your fridge and give it a shake or two a week for about 2 months then grate up the garlic with a fine grater and add it to you mashed potatoes and there you are it is done and you husband won’t know that it’s garlic in the potatoes and so long as they are refridgerated the garlic will get better and better with age just like wine. I love garlic scape. I have not pickled them before but I have made pesto and stir fried them. I have also dehydrated them, ground them into powder and use them as a seasoning.
